Hosta (Plantain lily) - Edible????

Do you ever found bundled and hawked young shoots and leaves of hostas as fresh produce?

It is often found in some prefectures of Japan. It has been used as a food source, and are most commonly consumed in Japan also in Korea. H. montana  and H. sieboldii are commonly used by Japanese for the nutritional value.

In Japan, it is sold as Urui. In fact, not only the leaves but the shoots and flowers are also edible. They can be eaten raw or cooked (boiled).
